Vegetables aren't just a side dish: they're the stars, capable of telling the story of time, the season, and transformation. Tuesday May 26, 2026, at 7:30 PM the’La Lanterna Inn dedicates his evening to The Garden That Ferments — a title that is already a manifesto. We are talking about fermentations, kombucha, kefir, of roots and leaves that transform over time: the vegetable garden of Lake Ceresio meet hands that work it long before the dish arrives, in dialogue with a special guest who has made fermentation a language.
A unique evening
Few seats in a private room, two wine pairings (or gin for dedicated evenings), a special guest alongside the chef Pamela: the format of the Educational Tuesdays It puts storytelling at the center. Two events per month starting in March 2026: each dedicated to a theme, a geography, or a memory of those who cook.
The menu of the evening
An entirely plant-based evening, where fermentation becomes the common thread—from the welcome reception to dessert.
- Welcome — elderberry kombucha, kefir water and orange blossoms
- An all-green appetizer — Mixed seed crackers with vegetable cream, dip, garden gazpacho, carrots with cheese sauce and bitter cocoa crumble, mixed salad, wild herbs, fermented radishes and seeds
- Legumes in pasta — with vegetable ragù
- Cauliflower cutlet
- Fermented yogurt — with honey, pollen and fresh fruit
Cost€60 per person, including two wine pairings.
