Tuesday <strong>May 26, 2026, at 7:30 PM<\/strong> the\u2019<strong>La Lanterna Inn<\/strong> dedicates his evening to <strong>The Garden That Ferments<\/strong> \u2014 a title that is already a manifesto. We are talking about <strong>fermentations<\/strong>, <strong>kombucha<\/strong>, <strong>kefir<\/strong>, of roots and leaves that transform over time: the vegetable garden of <strong>Lake Ceresio<\/strong> meet hands that work it long before the dish arrives, in dialogue with a special guest who has made fermentation a language.<\/p>\n<h2>A unique evening<\/h2>\n<p>Few seats in a private room, two wine pairings (or gin for dedicated evenings), a special guest alongside the chef Pamela: the format of the <strong>Educational Tuesdays<\/strong> It puts storytelling at the center. Two events per month starting in March 2026: each dedicated to a theme, a geography, or a memory of those who cook.<\/p>\n<h2>The menu of the evening<\/h2>\n<p>An entirely plant-based evening, where fermentation becomes the common thread\u2014from the welcome reception to dessert.<\/p>\n<ul>\n<li><strong>Welcome<\/strong> \u2014 elderberry kombucha, kefir water and orange blossoms<\/li>\n<li><strong>An all-green appetizer<\/strong> \u2014 Mixed seed crackers with vegetable cream, dip, garden gazpacho, carrots with cheese sauce and bitter cocoa crumble, mixed salad, wild herbs, fermented radishes and seeds<\/li>\n<li><strong>Legumes in pasta<\/strong> \u2014 with vegetable rag\u00f9<\/li>\n<li><strong>Cauliflower cutlet<\/strong><\/li>\n<li><strong>Fermented yogurt<\/strong> \u2014 with honey, pollen and fresh fruit<\/li>\n<\/ul>\n<p><strong>Cost<\/strong>\u20ac60 per person, including two wine pairings.<\/p>","protected":false},"excerpt":{"rendered":"<p>Tuesday, May 26th at Osteria La Lanterna in Cressogno: dinner dedicated to fermentation and garden cuisine, with a special guest.
